Water Kefir Second Ferment In Fridge
While milk kefir has over 50 probiotics water kefir has about 15 and is a fantastic way to get probiotics into your gut.
Water kefir second ferment in fridge. It gives those hungry microbes more food. People love the taste and especially kids and picky eaters. And ferment for 24 hours to 48 hours after which transfer it to the fridge. It may take about 5 to 7 days to ferment kefir in the fridge.
For any of these you can create a mineral rich stinging nettle water kefir for an added nutritional boost. Flavor however you like. Add the juice the zest and 1 quart of water kefir f f. Second fermenting your water kefir is a way to get the most from your water kefir.
For milk kefir i strain out the grains then do my second ferment in sealed jars at room temp for 24 hours before refrigeration. Later you can remove kefir grains and place the kefir in the fridge again for the second fermentation. Water kefir s second fermentation is a process by which to the brew that has already been fermented is added new sugar or fruits spices and left to ferment for a second time in a sealed container. During the 2nd ferment the water kefir is creating gas and building pressure which you want it to do this makes it nice and bubbly but with the metal lids you must let out some of the pressure burping it every 6 12 hours or so depending on the temperature in your kitchen so the lid doesn t explode open yes this happened to me. If you want your second fermented kefir to have less tart and yeasty flavors and be far creamier you can make kefir in the refrigerator by adding kefir grains to fresh milk. This method will give you more mellow tasting kefir. A continual water kefir ferment is not nearly as common as with kombucha a secondary ferment is often used as a means to further ripen the kefir so that it is more fermented and has a further range of folic acid and b vitamins but this is done first by taking the grains out and then letting the finished kefir sit for a day or so before consuming. Any swelling in the lid and i either burp the jar or refrigerate early. Our kefir above actually has a canning lid under the cloth wrap as it second ferments with garlic allow that kefir to sit for 4 6 to even 12 hours.
Ferment the nettle harvest. Gives it a bit of fizz not enough to cause an explosion but i keep an eye on it anyway especially on a hot day. When you add a new fuel source for the microbes in kefir they begin to grow and multiply which increases all the vitamins and especially the folic acid but it is the taste that makes me do it again and again.
